Tickleshed Christmas Bread

This Christmas sourdough is everything a holiday loaf should be — hearty, comforting, and just a little enchanted. Fermented slowly and baked until beautifully golden, it fills the kitchen with warmth and brings a sense of calm joy to every slice.

New Year Hearth Bread

The Quiet Reset Loaf

A grounding bread for the space between years—

when Christmas has passed,

but the magic never leaves.

INGREDIENTS

  • 3½ cups bread flour
  • 1½ tsp salt
  • 1 tsp sugar or honey
  • 2¼ tsp active dry yeast
  • 1¼ cups warm water
  • 2 tbsp olive oil

Optional additions (choose one, or none):

  • Chopped fresh rosemary
  • A spoonful of rolled oats
  • A pinch of cracked black pepper

METHOD

  1. Wake the yeast
Stir yeast and sugar into warm water. Let bloom 5–10 minutes until foamy.
  2. Bring it together
In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Knead with intention
Knead 8–10 minutes until smooth and elastic.
  4. First rise
Place in a lightly oiled bowl. Cover and let rise until doubled, about 1 hour.
  5. Shape & rest
Shape into a round hearth loaf. Rest 20–30 minutes while oven preheats to 425°F.
  6. Bake
Bake 25–30 minutes until golden and hollow-sounding when tapped.
  7. Cool (briefly)
Let cool just enough to slice. Warm bread is encouraged.

FROM THE SHED

This is not a celebration bread.

It’s a reset bread.

Baked when the tinsel comes down.

When the shed is swept clean.

When there’s room for what’s next.

The shed grows a little each year—

not outward, but inward.

Not louder, but deeper.

And so does the magic.

Dan’s Tickleshed

Where bread rises,

the shed grows,

and the magic never packs up.
